I love iced coffee. I love it in the summer and I love it in the winter. No matter what the temperature is outside, you can always find me with an iced-coffee in hand. If I am being honest, the best coffee comes during the fall and winter season. Pumpkin Spice Latté? Yes Please. Peppermint Mocha? I’ll take 2! All of the delicious and unique coffee flavors of the colder seasons has me wanting something a little more simple. So when summer comes around, I tend to go with a more basic, yet absolutely delicious, iced coffee recipe.

Does anyone else remember the first time they tried coffee? Me too, it was disgusting. Bitter, I definitely wanted to spit it out. I didn’t understand why it was so gross. I would watch my mom drink coffee and dream of tasting the creamy deliciousness. The real thing was not what I expected. However, like many of us, over time I figured out what I liked and didn’t like in my coffee.

Me? I love sweet coffee. Give me all the sugar, which is probably why I am such a fan of Dunkin Donuts. Don’t judge me if you see me add sugar to my already sweetened coffee. But this recipe is super versatile. You can add sugar if you like, but I enjoy this iced coffee recipe with or without.


Simple Summer Iced Coffee

When the days get hotter, a nice glass of iced-coffee is all I want to cool down. This caramel iced coffee recipe is refreshing and delicious.

Servings 1

Ingredients
  

  • 2 shots espresso (or chilled 8-ounce cup of coffee)
  • 1/4 cup milk of choice
  • 1 cup ice
  • 2 pump caramel syrup
  • 1 tbsp sugar (optional)

Instructions
 

  • Brew two shots of espresso. I use the Nespresso machine at home, but if you don't have an espresso machine, an 8-ounce cup of cooled coffee will work too.
  • Add 2 pumps of caramel syrup. I use Torani brand syrup, but there are also recipes online for homemade syrups.
  • Add optional sugar and stir. You can add more or less.
  • Add ice. I prefer crushed ice, but any ice will do.
  • Pour in milk and stir.
  • Enjoy!

Bonus!

Throw it all in a blender and you get a delicious, refreshing blended coffee. Perfect for hot days, when you just need to cool off.

When I am feeling particularly fancy, I will throw some caramel sauce and whipped cream on top. it gives it an extra little something and makes me happy, which is most important.


I can just see it now, sitting outside, sunscreen on, book in hand, sipping on my nice cold glass of iced coffee. There is no better way to enjoy the last couple weeks of summer. Even though my home is definitely starting to fill up with pumpkins.

Tell me I am not the first person to already have gotten my first pumpkin spiced latté. August 27th was pumpkin spiced latté day! I had to celebrate. Starbucks knows what’s up. It is fall as soon as that delicious, creamy drink hits the menu.

    This looks delicious. I don’t like cold coffee, I wish I did because so many drinks like this look amazing but I like mine strong, hot and black. I was that weird kid that never found it bitter x
