Growing up, I always knew it was going to be a good night when my parents broke out the tortilla chips and shredded cheese. When Nacho Night came around, I knew I was about to get settled in for a good movie and some family time. As I got older, this snack remained supreme, however now with a meatless twist! Still hanging out with my family, I created this vegetarian nachos recipe so I can still participate in movie night without eating meat!
I love me some snack food. It was something so present in my childhood and something I still enjoy to this day. Sometimes I don’t feel like eating my dinner with a fork and knife, all I want to do is grab my food right off the plate with my fingers. Must have something to do with connecting to my inner child!
Whatever the reason, whenever it is time for a movie night or a family game night, nachos are the first thing on my list. Over the years I have added more yummy toppings to the recipe, as well as switching out some toppings for meatless options.
I think I have finally cracked the recipe. I have created the perfect vegetarian nachos recipe that will have everyone excited! This is the perfect food for your next football game watch party, summer hang-out, or whatever else you enjoy doing. Any event where you need easy food that everyone enjoys, this is the go to recipe!
Preparation
The preparation for this recipe is so easy I could do it in my sleep. Although you probably shouldn’t sleep around the knife and hot oven!
The very first thing you will wnat to do is preheat the oven. It’s the thing that takes the longest when making this snack, so get that started as soon as possible.
Next, you want to get started on getting the toppings ready! I like chopping my toppings into small pieces, but you can prepare them however you like!
My biggest tip for the preparation of this vegetarian friendly snack is the prepare ahead of time. This is especially true of you are making these nachos for a party or event. All of the veggies and herbs can be chopped ahead of time and stored in containers in your fridge. That way, when you are all ready to cook, you can just throw all the ingredients together and put it in the oven.
Ingredients
In the recipe below, I list all of the toppings that I like to include on my nachos. However, the beauty of a party snack like this is that it is completely customizable. Whether you want to put different veggies on top, you like your nachos with a little more spice, or even if you want to add meat, that is all possible with this recipe.
Pro tip: If you are hosting a party, make it an activity and let everyone choose what toppings they want on their nachos!
For the ingredients, I tend to get my veggies and herbs from my local grocer or Trader Joe’s. I love the freshest ingredients because it makes the tastiest meal.
You can also get canned black-beans, sour cream, guacamole and pre-made pico de gallo at most grocery stores near you! I never get fancy enough to make the pico or guac on my own!
For the plant-based crumble, I tend to go for the Gardein brand. This cooks up really nicely on the stove and adds a little meaty flavor to this meatless dish. However, this is abslutely option, you can substitute it for any other plant-based or real meats. Or don’t include it at all and double the beans!

Vegetarian Nachos
Equipment
- Oven or Conventional Oven
- Cookie Sheet
- Non-Stick Foil
- Cutting Board
- Knife
Ingredients
- 1 Bag Tortilla Chips
- 1-2 Cups Shredded Cheese
- 1 Bundle Chopped Green Onions
- 1 Chopped Tomato
- 3-4 Chopped Mini Bell Peppers
- 1 Cup Cooked Plant-Based Crumble
- 1 Chopped Jalapeño
- 1 Can Black Beans
- 1/2 Cup Chopped Cilantro
- 1 Tablespoon Sour Cream
- Pico de Gallo
- Guacamole
Instructions
- Preheat oven to 425°
- Chop up the veggies and herbs (green onion, tomato, bell peppers, jalapeño, and cilantro)
- Place a layer of non-stick aluminum foil down on the cookie sheet
- Spred out the tortilla chips onto the pan
- Sprinkle shredded cheese over the chips in an even layer
- Add toppings including green onions, tomatos, bell peppers, plant-based crumble, jalapeño, and black beans. Include any other toppping you want, there is no limit!
- Place cookie sheet in oven and let cook for 8-10 minutes or until the edges of the cheese start to get crispy.
- Once cooked, sprinkle the chopped cilantro and drizzle some sour cream on top.
- You are all done! Divide the nachos up and serve with some pico de gallo and guacamole for a delicious meal or snack!
